CHRISTMAS MINI BUNDT CAKES

We found a mini Bundt pan and made Christmas Mini Bundt Cakes.  We weren’t sure if they would turn out as good as the original, but they sure did.  Not only will they look great on our Christmas dessert table, but they are perfect for giving out to our friends and family as a small Christmas gift.

How to Make Christmas Mini Bundt Cakes

Ingredients:

1 Package Yellow Cake Mix
1 Large Package Vanilla Pudding
¾ cups Oil
¾ cups Sherry
2 tsp. Vanilla
4 Eggs
1 Tbsp. Butter
½ cup Sugar
1 Tbsp. Cinnamon
½ cup Chopped Nuts (Pecans or Walnuts)
Mini Bundt Pan

Icing:

4 cups Powdered Sugar
5 Tbsp. Milk
2 Tsp. Vanilla

Decoration:

Red M&M’s
Green Jelly Slices Candy

Instruction:

  1. Make the batter for the Sherry Cake.
  2. In a separate bowl, mix the 1/2 cup sugar, 1/2 cup chopped nuts and 1 Tbsp. cinnamon for the Sherry Cake filing.    We used pecans here but sometimes we use walnuts. Both taste equally good.
  3. We baked our Mini Sherry Cakes in a Mini Bundt pan.  You want to grease the pan with shortening prior to filling it with cake batter.
  4. Partially fill the bundt pans – we filled them about half the way up.
  5. Sprinkle in some sugar and nut filling and then cover the filling with more cake batter.
  6. We baked our Mini Sherry Cakes for 20 minutes in a 350 degree oven.  Allow the cakes to cool completely.
  7. Make up a batch of icing to drizzle on the cakes.  In a bowl mix 4 cups of powdered sugar, 5 Tbsp. of Milk and 2 tsp. of vanilla.  Mix until the right consistency.
  8. Drizzle the icing over the cakes.
  9. To add a bit of Holiday pizzazz, we added a Holly Berry made out of Red M&M’s and a green Jelly Slice candy that we cut in half to form the holly leaves.
